Warm Summer Squash Salad

A very easy and simple recipe that requires few ingredients, but manages to still pack so much flavor in single bite!

Ingredients
  

  • 3 lbs zucchini
  • ¼ cup sliced almonds
  • 1 Tbsp olive oil
  • cup parmesan, grated
  • salt and pepper, to taste

Instructions
 

  • Cut the ends off the zucchini and thinly slice using a grater or knife.
  • Heat 1 Tbsp olive oil in a saute pan over medium heat. add ¼ cup sliced almonds and toast until golden brown.
  • Add the sliced zucchini and remove from the heat. Toss zucchini and almonds together and season to taste with salt and pepper.
  • Place on a serving dish and top with ⅔ cup grated parmesan cheese.
