
Warm Summer Squash Salad
A very easy and simple recipe that requires few ingredients, but manages to still pack so much flavor in single bite!
Ingredients
- 3 lbs zucchini
- ¼ cup sliced almonds
- 1 Tbsp olive oil
- ⅔ cup parmesan, grated
- salt and pepper, to taste
Instructions
- Cut the ends off the zucchini and thinly slice using a grater or knife.
- Heat 1 Tbsp olive oil in a saute pan over medium heat. add ¼ cup sliced almonds and toast until golden brown.
- Add the sliced zucchini and remove from the heat. Toss zucchini and almonds together and season to taste with salt and pepper.
- Place on a serving dish and top with ⅔ cup grated parmesan cheese.
