- 3 large cucumbers, thinly sliced
- 1 large red onion, julienned
- 1 C rice wine vinegar
- 1/2 tbsp honey
- 1 tbsp fresh dill weed roughly chopped
- pinch of mirin optional
- salt and pepper to taste
In a mixing bowl, whisk rice wine vinegar, honey, mirin, and dill weed.
Toss in cucumber and onion into the mixing bowl until it is fully coated. Season with salt and pepper.
Refrigerate for 2 hours and serve!
