Blackened Chicken Waldorf Salad

- 1 chicken breast, or 2 chicken thighs
- 1 tsp Cajun seasoning, or any spice mixture of preferred choice
- ½ tbsp olive oil
- 1/4 cup walnuts, toasted and chopped
- 2 large apples, cored and diced
- 4 celery stalks, diced
- 1/2 cup raisins
- ¼ C fat-free plain yogurt, or greek yogurt
- ¼ C low fat mayonnaise
- 1 tsp honey, optional
- 2 lemons, juiced
- Salt and pepper, to taste
Preheat oven to 350 degrees F. Heat up olive oil in a skillet over medium-high heat.
Season chicken with Cajun seasoning or any preferred spice mix. Once skillet up to temperature, sear chicken both sides for 2 - 3 minutes each until a nice brown color is present.
Remove chicken from heat and place it on the sheet pan. Throw it into the oven and bake for 12 - 15 minutes. Cook until chicken's internal temperature is 165 degrees F. Let it rest for 10 minutes so juices can redistribute.
While the chicken is resting (or baking in the oven), combine the nuts, apples, celery, and raisins.
Dice chicken into small cube. Add into the apple mixture.
Stir together yogurt, low fat mayo, honey, and lemon juice. Pour over apple-chicken mixture and toss lightly. Season to taste.
Refrigerate for 2 hours. Serve!
