Cauliflower Fried Rice

1 small mixing bowl
- 1 head of cauliflower, grated
- 2 carrots, small diced
- 4 celery stalks, small diced
- 1 medium onion, small diced
- 5 cloves garlic, minced
- 1 inch knob of ginger, minced
- 1 bunch green onion, thinly sliced
- 2 eggs, beaten
- 4 tbsp vegetable oil, or olive oil
- 4 tbsp low sodium soy sauce
- Pinch of sugar
- Salt and pepper, to taste
Grate the cauliflower. Prepare your carrots, celery, onion, garlic, ginger and green onion. Beat eggs in a small bowl.
Heat 1 tbsp of vegetable oil in large skillet over medium heat. Add eggs and scramble until cooked. Transfer it into a container.
On the same skillet, heat up 3 tbsp of vegetable oil. Add onion, garlic and ginger, and saute until fragrant.
Increase the heat to high and add carrots and celery, cooking until carrots are slightly tender. Add the grated cauliflower, soy sauce, pinch of sugar and salt.
Cook, stirring often. Once cauliflower is tender, turn off heat.
Mix in egg and green onion. Adjust seasoning. Serve!
