Cowboy Caviar (Bean Salsa)

This salsa is a party favorite. Using pantry items liked canned beans, corn, and tomatoes, this recipe comes together quickly and can serve a crowd.

Ingredients

  • 1 15.5 oz can low-sodium kidney beans, drained
  • 1 15 oz can low-sodium black beans, drained
  • 1 14.5 oz can low-sodium crushed tomatoes
  • 1 15 oz can low-sodium corn, drained
  • 1 4 oz can chopped green chilies
  • 1/4 cup onion, finely chopped
  • 1 tbsp oil
  • 3 limes, juiced
  • salt, to taste
  • black pepper, to taste,
  • hot sauce, optional

You can substitute 1/2 cup of dry beans instead of using canned beans. It should yield ~1½ cups of cooked beans.

Instructions

  • Wash hands with soap and water.
  • Mix kidney beans, black beans, corn, tomatoes, chilies, and onion in a large bowl.
  • Add oil and lime juice (if using), toss gently to combine. Taste. Add small amount of salt and pepper if desired.
  • Serve by itself, with raw vegetables and/or corn chips.
