Mexican Vegetable Rice

- 1⅓ C chicken, vegetable, or any preferred broth
- 1 C tomato sauce, or red salsa
- 1 C long grain rice
- 1 C onion, chopped
- ¾ C corn
- ½ C zucchini, chopped
- ½ C peas
- 1 15-ounce can reduced sodium black beans, rinsed and drained, or 1/2 C dry beans
- ½ bunch fresh cilantro, chopped
In a medium saucepan, bring broth, salsa, rice, and onion to a boil over medium-high heat. Reduce heat and simmer, covered, for 20 minutes.
Stir corn, zucchini, peas, and beans into hot rice and replace cover; let stand for 5 minutes.
Stir in cilantro and serve immediately.
