Mushroom and Potato Filipino Adobo

- 2 lbs mushrooms
- 2 large russet potatoes, peeled and diced
- 10 cloves garlic, minced
- 8 bay leaves
- 2 C soy sauce
- 1 C white wine vinegar
- salt and pepper, to taste
- 2 tbsp cooking oil
In a large pot over medium heat, add oil and saute the mushrooms. Add garlic and cook for several minutes until fragrant. Add the diced potatoes.
Pour the soy sauce, vinegar and bay leaves into the pot. Coat everything well. Cover with lid and reduce heat to low.
Cook the mushrooms and potatoes for 15 - 20 minutes or until the potatoes are fully cooked.
Remove from heat and serve!
