- 1 bunch kale, chopped very tiny
- 1 large cucumber, diced
- 2 yellow or orange bell pepper, diced
- 1 red bell pepper, diced
- 1 medium purple onion, diced
- 4 heirloom tomatoes, diced and deseeded
- 1/2 bunch cilantro, chopped
- 1 cup of blueberries, or any other fruit
Dressing:
- 1/3 C olive oil
- 1 small orange, juiced
- 1/2 tsp salt
- 1/2 tsp black pepper
In a jar add the olive oil, orange juice, salt and pepper and mix it very well.
Then add it to the vegetables in the bowl and toss it thoroughly.
Serve it as a side dish for lunch or dinner. Serve it on tostadas or add it to a shrimp cocktail. Yum!
