- 2 15 oz cans white beans, drained & rinsed (about 3 cups cooked beans)
- 1 cup carrots, shredded
- 1 cup kale, stems removed and shredded
- 1/2 cup radishes, thinly sliced
- 1/4 cup red onion, finely diced
- 1/2 cup sunflower seeds, toasted
- 2 oranges, zested
- 1 lemon, zested
- 1/4 cup orange juice
- 1-2 tbsp lemon juice
- 1/4 cup extra virgin olive oil
- 3/4 teaspoon sea salt
- Fresh cracked black pepper, to taste
In a large bowl, combine white beans with orange and lemon zest.
Whisk together citrus juices, olive oil, salt, and pepper.
Toss beans gently with dressing.
Fold in carrots, kale, radishes, and red onion.
Finish with toasted sunflower seeds just before serving.
Adjust seasoning and serve immediately.
