Cauliflower Ceviche

Ingredients
  

  • 1 head cauliflower, grated
  • 1 large cucumber, small diced
  • 1 red onion, small diced
  • 1 jalapeno, minced
  • 2 large tomatoes, diced
  • 1 bunch of cilantro, roughly chopped
  • 1 avocado, diced
  • 10 limes, juiced
  • Salt and pepper, to taste

Instructions
 

  • Combine all ingredients except avocado and cilantro in a large bowl. Mix thoroughly to coat with lime juice.
  • Add the avocado and cilantro and toss gently, taking care not to mash the avocado.
  • Cover and chill for at least two hours and up to 12 hours. Serve with tortilla chips or tostadas and enjoy!
