
Cauliflower Ceviche
A simple and cool dish that is vibrant in color and flavor!
Equipment
- 1 mixing bowl
Ingredients
- 1 head cauliflower, grated
- 1 large cucumber, small diced
- 1 red onion, small diced
- 1 jalapeno, minced
- 2 large tomatoes, diced
- 1 bunch of cilantro, roughly chopped
- 1 avocado, diced
- 10 limes, juiced
- Salt and pepper, to taste
Instructions
- Combine all ingredients except avocado and cilantro in a large bowl. Mix thoroughly to coat with lime juice.
- Add the avocado and cilantro and toss gently, taking care not to mash the avocado.
- Cover and chill for at least two hours and up to 12 hours. Serve with tortilla chips or tostadas and enjoy!
