Cauliflower Ceviche

- 1 head cauliflower, grated
- 1 large cucumber, small diced
- 1 red onion, small diced
- 1 jalapeno, minced
- 2 large tomatoes, diced
- 1 bunch of cilantro, roughly chopped
- 1 avocado, diced
- 10 limes, juiced
- Salt and pepper, to taste
Combine all ingredients except avocado and cilantro in a large bowl. Mix thoroughly to coat with lime juice.
Add the avocado and cilantro and toss gently, taking care not to mash the avocado.
Cover and chill for at least two hours and up to 12 hours. Serve with tortilla chips or tostadas and enjoy!
