
Bean, Corn and Tomato Slaw
A simple, colorful bean and corn slaw mixture that can adapt to your needs. As a topping. By itself. With tortilla chips. Anything goes!
Equipment
- 1 mixing bowl
Ingredients
- 3 C cooked beans, any
- 3 C corn
- 3 C tomato, deseeded and small diced
- 1 red onion, small diced
- 1 bunch cilantro, rough chopped
- 5 lemons, juiced
- salt and pepper, to taste
Instructions
- If using fresh beans, cook for 2 hours or until tender. Cool for an hour and refrigerate for 4 hours.
- In a mixing bowl, throw in beans, corn, tomatoes, onion and cilantro. Pour in lemon juice.
- With clean hands or a spoon, gently mix the mixture until it Is fully mixed. Season with and salt and pepper to taste.
- Serve! Leftovers can be refrigerated up to 2 days.
