Bean, Corn and Tomato Slaw

Ingredients
  

  • 3 C cooked beans, any
  • 3 C corn
  • 3 C tomato, deseeded and small diced
  • 1 red onion, small diced
  • 1 bunch cilantro, rough chopped
  • 5 lemons, juiced
  • salt and pepper, to taste

Instructions
 

  • If using fresh beans, cook for 2 hours or until tender. Cool for an hour and refrigerate for 4 hours.
  • In a mixing bowl, throw in beans, corn, tomatoes, onion and cilantro. Pour in lemon juice.
  • With clean hands or a spoon, gently mix the mixture until it Is fully mixed. Season with and salt and pepper to taste.
  • Serve! Leftovers can be refrigerated up to 2 days.
