Beet Poké

A cool and refreshing beet poké!

Ingredients
  

  • 2-3 beets, depending on their size
  • 3 large roma tomatoes, small diced
  • 1/2 medium or 1 small red onion, small diced
  • 1 bunch of green onions, sliced
  • 2-3 tbs of low sodium soy sauce, or tamari sauce
  • 2 tbs of sesame oil
  • salt and pepper, to taste

Instructions
 

  • Peel the beets and boil until tender.
  • Meanwhile the beets are cooking, dice tomatoes, onion, and slice green onions. Set aside.
  • Once the beets are cooked, drain liquid and cool for 10 to 15 minutes.
  • Once the beets are cool, dice them into 1 inch cubes and toss them with sesame oil in a mixing bowl.
  • After the beets are fully coated in sesame oil, add in the diced tomatoes, onion and green onions.
  • Add the soy sauce.
  • Toss everything together. Season with salt and pepper to taste.
  • Once everything is well incorporated, chill for a 2 hours. Then serve.
