
Blackened Chicken Waldorf Salad

Equipment
- 1 Skillet
- 1 small sheet pan
- 1 thermometer
Ingredients
- 1 chicken breast, or 2 chicken thighs
- 1 tsp Cajun seasoning, or any spice mixture of preferred choice
- ½ tbsp olive oil
- 1/4 cup walnuts, toasted and chopped
- 2 large apples, cored and diced
- 4 celery stalks, diced
- 1/2 cup raisins
- ¼ C fat-free plain yogurt, or greek yogurt
- ¼ C low fat mayonnaise
- 1 tsp honey, optional
- 2 lemons, juiced
- Salt and pepper, to taste
Instructions
- Preheat oven to 350 degrees F. Heat up olive oil in a skillet over medium-high heat.
- Season chicken with Cajun seasoning or any preferred spice mix. Once skillet up to temperature, sear chicken both sides for 2 - 3 minutes each until a nice brown color is present.
- Remove chicken from heat and place it on the sheet pan. Throw it into the oven and bake for 12 - 15 minutes. Cook until chicken's internal temperature is 165 degrees F. Let it rest for 10 minutes so juices can redistribute.
- While the chicken is resting (or baking in the oven), combine the nuts, apples, celery, and raisins.
- Dice chicken into small cube. Add into the apple mixture.
- Stir together yogurt, low fat mayo, honey, and lemon juice. Pour over apple-chicken mixture and toss lightly. Season to taste.
- Refrigerate for 2 hours. Serve!
