Cauliflower Fried Rice

Ingredients
  

  • 1 head of cauliflower, grated
  • 2 carrots, small diced
  • 4 celery stalks, small diced
  • 1 medium onion, small diced
  • 5 cloves garlic, minced
  • 1 inch knob of ginger, minced
  • 1 bunch green onion, thinly sliced
  • 2 eggs, beaten
  • 4 tbsp vegetable oil, or olive oil
  • 4 tbsp low sodium soy sauce
  • Pinch of sugar
  • Salt and pepper, to taste

Instructions
 

  • Grate the cauliflower. Prepare your carrots, celery, onion, garlic, ginger and green onion. Beat eggs in a small bowl.
  • Heat 1 tbsp of vegetable oil in large skillet over medium heat. Add eggs and scramble until cooked. Transfer it into a container.
  • On the same skillet, heat up 3 tbsp of vegetable oil. Add onion, garlic and ginger, and saute until fragrant.
  • Increase the heat to high and add carrots and celery, cooking until carrots are slightly tender. Add the grated cauliflower, soy sauce, pinch of sugar and salt.
  • Cook, stirring often. Once cauliflower is tender, turn off heat.
  • Mix in egg and green onion. Adjust seasoning. Serve!
