
Cauliflower Fried Rice
A popular and simple fried cauliflower recipe.
Equipment
- 1 grater
- 1 small mixing bowl
Ingredients
- 1 head of cauliflower, grated
- 2 carrots, small diced
- 4 celery stalks, small diced
- 1 medium onion, small diced
- 5 cloves garlic, minced
- 1 inch knob of ginger, minced
- 1 bunch green onion, thinly sliced
- 2 eggs, beaten
- 4 tbsp vegetable oil, or olive oil
- 4 tbsp low sodium soy sauce
- Pinch of sugar
- Salt and pepper, to taste
Instructions
- Grate the cauliflower. Prepare your carrots, celery, onion, garlic, ginger and green onion. Beat eggs in a small bowl.
- Heat 1 tbsp of vegetable oil in large skillet over medium heat. Add eggs and scramble until cooked. Transfer it into a container.
- On the same skillet, heat up 3 tbsp of vegetable oil. Add onion, garlic and ginger, and saute until fragrant.
- Increase the heat to high and add carrots and celery, cooking until carrots are slightly tender. Add the grated cauliflower, soy sauce, pinch of sugar and salt.
- Cook, stirring often. Once cauliflower is tender, turn off heat.
- Mix in egg and green onion. Adjust seasoning. Serve!
