Mexican Vegetable Rice

Ingredients
  

  • 1⅓ C chicken, vegetable, or any preferred broth
  • 1 C tomato sauce, or red salsa
  • 1 C long grain rice
  • 1 C onion, chopped
  • ¾ C corn
  • ½ C zucchini, chopped
  • ½ C peas
  • 1 15-ounce can reduced sodium black beans, rinsed and drained, or 1/2 C dry beans
  • ½ bunch fresh cilantro, chopped

Instructions
 

  • In a medium saucepan, bring broth, salsa, rice, and onion to a boil over medium-high heat. Reduce heat and simmer, covered, for 20 minutes.
  • Stir corn, zucchini, peas, and beans into hot rice and replace cover; let stand for 5 minutes.
  • Stir in cilantro and serve immediately.
