Mushroom and Potato Filipino Adobo

Ingredients
  

  • 2 lbs mushrooms
  • 2 large russet potatoes, peeled and diced
  • 10 cloves garlic, minced
  • 8 bay leaves
  • 2 C soy sauce
  • 1 C white wine vinegar
  • salt and pepper, to taste
  • 2 tbsp cooking oil

Instructions
 

  • In a large pot over medium heat, add oil and saute the mushrooms. Add garlic and cook for several minutes until fragrant. Add the diced potatoes.
  • Pour the soy sauce, vinegar and bay leaves into the pot. Coat everything well. Cover with lid and reduce heat to low.
  • Cook the mushrooms and potatoes for 15 - 20 minutes or until the potatoes are fully cooked.
  • Remove from heat and serve!
