
Mushroom and Potato Filipino Adobo
A tangy and saucy Filipino dish that takes advantage of flavor-absorbing mushrooms and potatoes! Don't feel guilty for grabbing seconds.....
Ingredients
- 2 lbs mushrooms
- 2 large russet potatoes, peeled and diced
- 10 cloves garlic, minced
- 8 bay leaves
- 2 C soy sauce
- 1 C white wine vinegar
- salt and pepper, to taste
- 2 tbsp cooking oil
Instructions
- In a large pot over medium heat, add oil and saute the mushrooms. Add garlic and cook for several minutes until fragrant. Add the diced potatoes.
- Pour the soy sauce, vinegar and bay leaves into the pot. Coat everything well. Cover with lid and reduce heat to low.
- Cook the mushrooms and potatoes for 15 - 20 minutes or until the potatoes are fully cooked.
- Remove from heat and serve!
