
Rainbow Summer Kale Salad with Orange Vinaigrette
A colorful and vibrant salad accentuated with a citrusy punch!
Ingredients
- 1 bunch kale, chopped very tiny
- 1 large cucumber, diced
- 2 yellow or orange bell pepper, diced
- 1 red bell pepper, diced
- 1 medium purple onion, diced
- 4 heirloom tomatoes, diced and de-seeded
- 1/2 bunch cilantro, chopped
- 1 cup of blueberries, or any other fruit
Dressing:
- 1/3 C olive oil
- 1 small orange, juiced
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a jar add the olive oil, orange juice, salt and pepper and mix it very well.
- Then add it to the vegetables in the bowl and toss it thoroughly.
- Serve it as a side dish for lunch or dinner. Serve it on tostadas or add it to a shrimp cocktail. Yum!
