Sunshine Citrus and White Bean Market Bowl

Ingredients
- 2 15 oz cans white beans, drained & rinsed (about 3 cups cooked beans)
- 1 cup carrots, shredded
- 1 cup kale, stems removed and shredded
- 1/2 cup radishes, thinly sliced
- 1/4 cup red onion, finely diced
- 1/2 cup sunflower seeds, toasted
- 2 oranges, zested
- 1 lemon, zested
- 1/4 cup orange juice
- 1-2 tbsp lemon juice
- 1/4 cup extra virgin olive oil
- 3/4 teaspoon sea salt
- Fresh cracked black pepper, to taste
Instructions
- In a large bowl, combine white beans with orange and lemon zest.
- Whisk together citrus juices, olive oil, salt, and pepper.
- Toss beans gently with dressing.
- Fold in carrots, kale, radishes, and red onion.
- Finish with toasted sunflower seeds just before serving.
- Adjust seasoning and serve immediately.
