Ingredients
  

  • 2 15 oz cans white beans, drained & rinsed (about 3 cups cooked beans)
  • 1 cup carrots, shredded
  • 1 cup kale, stems removed and shredded
  • 1/2 cup radishes, thinly sliced
  • 1/4 cup red onion, finely diced
  • 1/2 cup sunflower seeds, toasted
  • 2 oranges, zested
  • 1 lemon, zested
  • 1/4 cup orange juice
  • 1-2 tbsp lemon juice
  • 1/4 cup extra virgin olive oil
  • 3/4 teaspoon sea salt
  • Fresh cracked black pepper, to taste

Instructions
 

  • In a large bowl, combine white beans with orange and lemon zest.
  • Whisk together citrus juices, olive oil, salt, and pepper.
  • Toss beans gently with dressing.
  • Fold in carrots, kale, radishes, and red onion.
  • Finish with toasted sunflower seeds just before serving.
  • Adjust seasoning and serve immediately.
