
Traditional Spanish Gazpacho
A refreshing taste of summer!
Ingredients
- 2-3 large tomatoes
- 1 cucumber, peeled if desired
- green bell pepper
- ½ small onion
- 1-2 cloves garlic
- 1 slice rustic bread, soaked in water and gently squeezed
- 2 tbsp apple cider vinegar or Spanish sherry vinegar
- 2-3 tbsp ex virgin olive oil
- 1 tsp salt to taste
- Freshly ground black pepper, to taste
- Cold water, if needed, to reach your preferred consistency
Instructions
- Roughly chop the tomatoes, cucumber, bell pepper, onion, and garlic.
- Soak the bread in water for about 5 minutes, then gently squeeze out the excess water.
- Add the vegetables, bread, vinegar, olive oil, salt, and pepper to a blender.
- Blend until completely smooth.
- Taste and adjust the seasoning. Add more salt, vinegar, or olive oil until the flavors are balanced.
- If the soup is thicker than you'd like, blend in a little cold water.
- Optional: If possible chill for at least one hour before serving.
