Yellow Curry

Ingredients
  

  • 3 Tbsp yellow curry paste
  • 2 cans coconut milk
  • 1 onion
  • 1 cup mushrooms
  • 1 cup carrots
  • 2 cups potatoes
  • 1 cup cauliflower
  • 1 14 oz can bone broth or stock
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon curry powder
  • Soy sauce
  • Pinch of sugar

Instructions
 

  • Pour two cans of coconut milk into a pot. After it’s boiled, add potato. Cook potato for a couple minutes.
  • Add curry paste into the pot, stir until it dissolves. After that add a can of bone broth.
  • Add onion, carrots and cauliflower and wait until it boils
  • Put a pinch of turmeric, curry powder. Add fish or soy sauce and sugar to taste, and simmer for 15 minutes.
  • Add a mushrooms and a couple dry chilis (If you want to add some heat) and simmer for a couple minutes.
  • Serve by itself or with white rice.
