
Yellow Curry
A versatile, flavorful dish that can be eaten as a stew or over rice. Perfect for those cold days!
Ingredients
- 3 Tbsp yellow curry paste
- 2 cans coconut milk
- 1 onion
- 1 cup mushrooms
- 1 cup carrots
- 2 cups potatoes
- 1 cup cauliflower
- 1 14 oz can bone broth or stock
- 1/2 teaspoon turmeric
- 1/2 teaspoon curry powder
- Soy sauce
- Pinch of sugar
Instructions
- Pour two cans of coconut milk into a pot. After it’s boiled, add potato. Cook potato for a couple minutes.
- Add curry paste into the pot, stir until it dissolves. After that add a can of bone broth.
- Add onion, carrots and cauliflower and wait until it boils
- Put a pinch of turmeric, curry powder. Add fish or soy sauce and sugar to taste, and simmer for 15 minutes.
- Add a mushrooms and a couple dry chilis (If you want to add some heat) and simmer for a couple minutes.
- Serve by itself or with white rice.
