Pico de Gallo and Guacamole
The quality of the tomatoes is what makes or breaks the pico de gallo. It is best when the tomatoes are in season during the summer.

- 2 large tomatoes, diced
- ½ red onion, diced
- 2 lemon, juiced
- ½ bunch cilantro, rough chopped
- spicy pepper, to your preference
- salt and pepper, to taste
- 2 avocados
In a mixing bowl, add tomatoes, onion, cilantro and one juiced lemon. Your spicy pepper.
With clean hands or a spoon, mix. Season with salt and pepper.
In a separate bowl, add your avocados and gently mash until smooth.
Grab ⅓ of your tomato mixture and add it into your mash avocado. Add juice of one lemon and mix with a spoon.
Serve with tortilla chips!
