
Asian Cucumber Salad
An refreshing cucumber salad that can be enjoyed with your favorite protein or as a quick snack!
Equipment
- 1 mixing bowl
Ingredients
- 3 large cucumbers, thinly sliced
- 1 large red onion, julienned
- 1 C rice wine vinegar
- 1/2 tbsp honey
- 1 tbsp fresh dill weed roughly chopped
- pinch of mirin optional
- salt and pepper to taste
Instructions
- In a mixing bowl, whisk rice wine vinegar, honey, mirin, and dill weed.
- Toss in cucumber and onion into the mixing bowl until it is fully coated. Season with salt and pepper.
- Refrigerate for 2 hours and serve!
