Ingredients
  

  • 3 large cucumbers, thinly sliced
  • 1 large red onion, julienned
  • 1 C rice wine vinegar
  • 1/2 tbsp honey
  • 1 tbsp fresh dill weed roughly chopped
  • pinch of mirin optional
  • salt and pepper to taste

Instructions
 

  • In a mixing bowl, whisk rice wine vinegar, honey, mirin, and dill weed.
  • Toss in cucumber and onion into the mixing bowl until it is fully coated. Season with salt and pepper.
  • Refrigerate for 2 hours and serve!
