Green Goddess Dressing

Equipment

  • Food processor, blender, mortar and pestle, etc.

Ingredients

  • 2 C raw cashews
  • 3 C hot water
  • ½ C cold water
  • 2 lemons, zested and juiced
  • 2 tsp salt

1 Bunch Each:

  • garlic chives, if you cannot find garlic chives, use 4 garlic cloves instead
  • parsley, trim off stems
  • cilantro, trim off stems
  • green onions, trim off and save onion whites
  • 1 tbsp capers
  • 1 tbsp fresh tarragon, leaves stripped (optional)
  • 1 tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

  • In a food processor, combine cashews, water, garlic chives, parsley, cilantro, green onions, lemon juice, zest, capers, tarragon, extra virgin olive oil, and pepper. Pulse until well combined. Season to taste.
  • Serve as a dip, toss with salad greens or use as a spread. Store in an airtight container in the fridge for up to 5 days.
