
Green Goddess Dressing
As a dressing for your vegetable crudité or as a spread for your sandwich, this recipe is sure to become a staple in your pantry!

Equipment
- Food processor, blender, mortar and pestle, etc.
Ingredients
- 2 C raw cashews
- 3 C hot water
- ½ C cold water
- 2 lemons, zested and juiced
- 2 tsp salt
1 Bunch Each:
- garlic chives, if you cannot find garlic chives, use 4 garlic cloves instead
- parsley, trim off stems
- cilantro, trim off stems
- green onions, trim off and save onion whites
- 1 tbsp capers
- 1 tbsp fresh tarragon, leaves stripped (optional)
- 1 tsp black pepper
- 2 tbsp extra virgin olive oil
Instructions
- In a food processor, combine cashews, water, garlic chives, parsley, cilantro, green onions, lemon juice, zest, capers, tarragon, extra virgin olive oil, and pepper. Pulse until well combined. Season to taste.
- Serve as a dip, toss with salad greens or use as a spread. Store in an airtight container in the fridge for up to 5 days.
