Rainbow Summer Kale Salad with Orange Vinaigrette

Ingredients

  • 1 bunch kale, chopped very tiny
  • 1 large cucumber, diced
  • 2 yellow or orange bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium purple onion, diced
  • 4 heirloom tomatoes, diced and deseeded
  • 1/2 bunch cilantro, chopped
  • 1 cup of blueberries, or any other fruit

Dressing:

  • 1/3 C olive oil
  • 1 small orange, juiced
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • In a jar add the olive oil, orange juice, salt and pepper and mix it very well.
  • Then add it to the vegetables in the bowl and toss it thoroughly.
  • Serve it as a side dish for lunch or dinner. Serve it on tostadas or add it to a shrimp cocktail. Yum!
